In south.... some variations used are

- Oil / Ghee
- Toor dal / urad dal
- Mustard seeds
- Sometimes methi seeds used
- Curry leaves

Typically these phodni / tadka are used for rasam / sambar or for that matter most of the south indian liquid preparation
